Homemade Subway Sandwich!

This week I've been eating homemade Subway sandwiches for lunch. They are so filling and light. If you haven't had one for awhile, you should make one soon.

INGREDIENTS:
Dairy free Multi-grain roll
1 slice turkey
3 pieces of salami
1/3 of cucumber
1/5 of red bell pepper
spinach
mustard

Hard Night....arggg!

Last night, one of our good friends offered us a Panda Express Fortune Cookie. Obviously, I'm not very good with this new lifestyle yet because I didn't even pause to think if it had dairy in it like I usually do. We also had a piece of bacon, but I can't imagine that it had any dairy.

I tried searching for the Panda Express Fortune Cookie ingredients, but I can only find the nutritional information. Other fortune cookie recipes I saw did not have dairy in them, so I don't know. Maybe it's just cooked on the same equipment as dairy or something.

All I know is I had a bad reaction last night and got very little sleep! I haven't felt like this in a while. It totally caught me by surprise. I was nauseous and my intestines became HUGE again. It was not fun. I'm feeling a little better this morning, but not great like I was when I had my dairy free days this week.

It's pretty frustrating because it was a total accident. I really didn't want any dairy in my system this early. I feel like I'm starting over again, but what can you do. This journey is going to be a great learning experience.

Tacos!

Tonight we ate delicious tacos! As you'll see in future posts, we love Mexican food. These simple tacos had so much flavor. Hope you like them too.

INGREDIENTS:
1 lb ground turkey
1/4 c. taco seasoning
3/4 c. water
1/2 a tomato
taco shells
cilantro
spinach
salsa

DIRECTIONS:
1) Brown Ground Turkey
2) Add Taco Seasoning and follow cooking directions on package.
3) Serve and Enjoy!

Free at Last!

For 5 years I have suffered from unexplained nausea, bloating, intestinal cramping, etc, etc. I never understood why I felt this way sometimes. After trial and error (don't worry I'm going to a doctor this summer), I have concluded that my body can no longer digest dairy products very well. I tried taking lactose pills and that seemed to help over the last 5 months, but it's not enough anymore. Hence, I am striving to go dairy free till we figure this out. This is my 3rd day and I feel great! No more intestines 10 times their real size. Yay! I hope I can keep this up. Wish me luck!
